The summer sun goes hand-in-hand with a well seasoned, flawlessly grilled Tri-Tip. Garlic and herb flavors shine through to create a mouthwatering steak that you can easily pair with roasted vegetables, potatoes, a crisp side salad, and a bold red wine.

Ingredients:
- 3 Tbsp – Lasseter Family Heirloom Farms Provence Herb Blend
- 3 Cloves of Garlic
- 1 1/2 tsp – Dried Oregano
- 1 tsp – Coarse Sea Salt
- 2 Tbsp – Fresh Lemon Juice
- 1/2 Cup – Lasseter Heirloom Farms Extra Virgin Olive Oil
- 2 1/2 -2 3/4 lb – Tri-Tip Beef Roast
Preparation:
Step one:
Place Provence herb blend, garlic, and dried oregano in a food processor, blend until garlic is finely chopped. Add extra virgin olive oil and lemon juice and blend again. Let garlic herb oil sit for an hour, can be made a day ahead of time.
Step two:
Preheat grill to 475 degrees. Season Tri-Tip with salt, pepper, Provence herb blend and some of the garlic herb oil. Once grill is hot, cook Tri-Tip for about 3 minutes per side until it is nicely seared. Then place the Tri-Tip on the top rack of the grill and cook indirectly for about 15 minutes. Remove and cover for about 10 minutes.
Step three:
After 10 minutes, slice steak and serve with the garlic herb oil on the side.
