Pairing Lasseter Enjoué Rosé With Salmon

Looking to host a summertime get-together meal that will impress your guests?

Michele Anna Jordan of The Press Democrat has the perfect recipe, “Wild Salmon with Tzatziki & Cucumbers” with side dish ideas, all pairing joyfully with our 2015 Enjoué ‪‎rosé.

LFW-ENJ-2015-Bottle-HiResPress Democrat Wine of the Week, Lasseter Family Winery 2015 Enjoué, is an exuberant Provençal-style rosé. It’s as refreshing as a starry summer night, with just enough minerality to suggest water splashing over river rocks.

Fruit flavors suggest watermelon, cucumber and white grapefruit rind, with just a hint of strawberry on the finish. The wine is sophisticated, balanced and infinitely quaffable. It is ideal with summer fare.

Enjoy the wine with watermelon salads, rare ahi tuna, grilled zucchini, Padrón chiles and that famous sandwich of Provence, pan bagnat. The wine will go well with lighter Southeast Asian foods, too, such as spring rolls, green curries if they are not too hot, and Thai and Vietnamese salads — green papaya salad is a perfect match. It’s a good match with gravlax, ceviche, smoked salmon, smoked trout and canned tuna tossed with chickpeas, small-shaped pasta, celery and lemon vinaigrette.

On a hot day, the wine makes a great companion to simple cucumber sandwiches made with creme fraiche instead of cream cheese.

Enjoué also is a fabulous match with wild Pacific King salmon. Here it is paired with cucumbers prepared two ways, in a tangy yogurt-based tzatziki and sliced in salt and lemon juice. You can, if you like, serve seared Padrón chiles alongside.

Wild Salmon with Tzatziki & Cucumbers Recipe
Serves 2

1 small cucumber, peeled, seeded and minced
1 teaspoon kosher salt
2-3 garlic cloves, minced
4 ounces (½ cup) plain whole milk yogurt
2 tablespoons fresh snipped chives
1 large cucumber, peeled, seeded and very thinly sliced
— Juice of 1 lemon
2 wild salmon fillets, about 6 ounces each, pin bones removed
— Olive oil
— Black pepper in a mill

Put the minced cucumbers into a strainer, add 1 teaspoon of salt, toss gently and let drain for about 20 minutes; stir the cucumbers now and then.

Press out any excess moisture and transfer the cucumbers to a bowl. Add the garlic, yogurt and half the chives. Stir well, cover and refrigerate.

Put the sliced cucumbers into a small bowl, season with about a teaspoon of salad, and add the lemon juice. Cover and refrigerate for 30 minutes.

Preheat the oven to 250 degrees.

Set the salmon on a clean work surface, season all over with salt and brush with olive oil. Season with several turns of black pepper. Set the salmon on a clean baking sheet, set on the middle rack of the oven and cook for 15 to 20 minutes, depending on the thickness of the fish. Remove from the oven and let rest 5 minutes.

Use your fingers to divide the sliced cucumbers between two plates and drape a salmon fillet on top. Spoon tzatziki over the salmon, then garnish with the extra chives. Enjoy right away.

Wine of the Week: Lasseters’ 2015 Enjoué rosé

John and Nancy Lasseter went on a buying spree of sorts back in 2009. Their loot? Three dozen bottles of rosé from the south of France.

Our wine-of-the-week winner is the Lasseters’ rosé, the wine painstakingly crafted after sipping through those 36 imported bottles.

The Enjoué, 2015 Sonoma Valley Estate Rosé at $28 is striking because it has an incredible range. The salmon-colored rosé has aromas and flavors of mango, strawberry, grapefruit and mineral. It’s nice and dry, and finishes crisp, leaving you wanting another sip.

The name Enjoué is French for ”joyful, playful and lighthearted.”

 

 

“Our goal is to produce a wine that is evocative of the wines from the southern Rhone, particularly Provence and Bandol,” said winemaker Julia Iantosca. “Fortunately we have the varieties traditionally used to create these wines planted in our vineyards, and our site on the Glen Ellen Bench is one where these varieties flourish.”

The most important element is to use high quality grapes, Iantosca said, since lower quality fruit is unlikely to result in a top quality wine.5_Lasseter Family Winery_Vineyards_IMG_2306

The uninitiated may not know that rosé is versatile, she said.

“While it works wonderfully as an aperitif, most people’s association, it also pairs beautifully with a wide range of food.”

Iantosca said she’s good at making rosé because she has been making it for decades, but she is quick to call the Enjoué a team effort. The Lasseters are involved in tastings to craft the blend, and she gives kudos to the farmers behind the fruit — grower Phil Coturri and the entire team at Enterprise Vineyard Management.

The 59-year-old Iantosca said she never expected to find herself immersed in the world of wine. She belonged to the 4-H Club and wanted to be a veterinarian. But after a wine tasting class at UC Davis, her fascination with four-legged creatures waned.

“I started taking more courses in viticulture and enology,” Iantosca said. “Then I took off the fall of 1978 to do an internship at Dry Creek Vineyards. After that I was hooked.”

Iantosca said meeting her future husband, Bob Iantosca, made winemaking even more intriguing. He was cellar master at Dry Creek Vineyards at the time.

In 1979, Iantosca graduated from UC Davis with a bachelor’s degree in Fermentation Science.

“I love the process of blending wines, and I feel I have a flair for creating blends,” she said.

 The name, Enjoué, a French word meaning “joyful; playful; lighthearted; sunny; buoyant; cheerful,” captures the essence of that experience. A white wine blend of Semillon and Sauvignon Blanc, Voilà was inspired by the wines of the southern Bordeaux region of Graves. After extensive tastings of white wines, we discovered that Semillon and Sauvignon Blanc blends resonated best with our palates. A white wine blend we love to drink. Voilà, enough said.

Chemin de Fer, a French phrase that means “railroad,” to honor the path that led us to this wine. The label painting depicts our steam train as it meanders through the Syrah vineyard. A red blend in the Southern Rhône style with a focus on Grenache. Fruit forward and food friendly, this wine evokes memories of the Lasseters’ relaxing train travel through France and the old world blends enjoyed on their journeys.

A lush blend that is mostly Malbec; smooth and dense with blueberry, plum and spice; deep and rich with lovely balance and tangy flavors. 73% Malbec, 17% Cabernet Sauvignon, 8% Merlot, 2% Cabernet Franc. – Anthony Dias Blue

We chose the name Amoureux, a French word meaning “lovers,” because this Malbec blend reminds us of when we first fell in love. A Bordeaux-style blend made primarily of Malbec and Cabernet Sauvignon. John and Nancy were first introduced to Malbec on their honeymoon in Sonoma County, and this wine commemorates that discovery. Our love affair with Malbec inspired us to plant it on our estate, Justi Creek Vineyards, and to create a unique blend that reflects our relationship.

The 2015 Toute Suite is a dry rosé made entirely from Syrah, resulting in a delicate fuchsia color. This wine has incredible aromas of fresh strawberries, hints of mango, a supple mouth feel, and a long lingering finish. Toute Suite is rich but still light on its feet. Try it with grilled salmon and your favorite salad for an easy mid-week dinner.

Harvest is here, and our winemaking team is optimistic that 2015 will be another outstanding vintage for Lasseter Family Winery.

Your next wine club selection is being prepared. Depending upon your Wine Club membership, the selections include the 2012 vintage of our Bourdeux inspired blend, Amoureux. A blend of Malbec, Cabernet Sauvignon, Merlot and Cabernet Franc. The word Amoureux means “the lovers” in French, and reflects John and Nancy’s passion for each other, winemaking, and also their affection for the Malbec that they first sampled on their honeymoon.

The full-bodied Bourdeux inspired blend, Amoureux is perfect to pair to the heartier style foods that are so perfect for fall. Amoureux is brilliant with beef or lamb roasts, or a French inspired Cassoulet. Or, perhaps enjoy an indulgent board of charcuterie, sausage and aged cheese as you sit in front of a roaring fire with someone you love?

We’re also excited to announce the release of a brand new Lasseter Family Wine – Zut Alors. This 2013 vintage wine was the result of the mercurial nature of the blending process. “Zut Alors” is a French phrase that translates to “Aw Shucks!”, and that’s exactly what we said when we found we had a small lot of Semillon left over after creating our Voilà blend. This happy accident was too good not to share with our friends, so a new wine was born. A very small quantity of this wine was produced, and is being included in the upcoming shipment only for our Enthusiast and Collector level Lasseter Family Wine Club members.

Harvest is just around the corner, and our winemaking team is optimistic that 2015 will be another outstanding vintage for Lasseter Family Winery.

Your next wine club selection is being prepared. Your selection includes the 2013 vintage of our Rhône inspired blend, Chemin De Fer. A blend of Grenache, Syrah & Mourvèdre, this wine shows aromas of raspberry and spice, followed with mouth-watering berry flavors that harmonize with soft supple tannins.

Also included in your selection is our flagship winePaysage – A blend of Merlot, Cabernet Sauvignon, Malbec and Cabernet Franc. The 2012 vintage shows classic ripe plum flavors and a full-bodied complexity that pairs beautifully with food.

Our very first white wine blend, 2013 Voilà is a blend of Semillon, Sauvignon Blanc & Sauvignon Musqué debuted in April, 2015 and received a score of 92 Points in The Tasting Panel’s August 2015 issue by Editor-in-Chief Anthony Dias Blue!

John and Nancy have long been fans of internationally acclaimed Sonoma Valley artist Dennis Ziemienski, and of his retro, posterly style. They are proud to feature Dennis’ artwork on all of the Lasseter Family Wine labels, as with the Voilà label in which he appears on the label artwork itself, with each label telling a story particular to that wine. Through Dennis, the Lasseters have found the ideal way to express their love for wine and for the art of story telling.

Wine tasting, of course, is also an art; and the Lasseters have created a lovely tasting experience, which takes place in the Glen Ellen winery’s dedicated “Wine Room.” Each of the unique blended wines is artfully paired with just the right flavors for tastings, winemaker dinners and special events. Dennis Ziemienski’s wine labels not only adorn the Lasseter’s bottles, but also appear on a series of wooden puzzles, available at the winery. When you visit the Wine Room, you might find a puzzle in progress. Visitors may also purchase beautiful posters and other tastefully designed merchandise.
